S'mores. My way! Fragole, marshmallows ai fiori d'arancio e graham crackers!


Tutti gli anni, quando l'estate sta per finire e nell'aria si avverte l'odore umido dell'autunno, mi sento sconfitta. E' una sensazione passeggera ma una parte di me  si convince di aver perso una battaglia. 
La battaglia dell'estate sull'autunno a quanto pare e' un accadimento di cui mi sento responsabile e che prendo molto sul personale.
No, non e' un delirio di onnipotenza ma l'amara consapevolezza che anche questa volta ho ignorato quella voce interiore che mi ripete "Molla tutto e apri un baracchino di frutta fresca e centrifugati ai Caraibi". Allora si' che l'estate avrebbe la meglio sull'autunno! Sotto sotto penso che un baracchino ai Caraibi sarebbe la soluzione ad ogni problema…e poi penso alle caldarroste, al Vin Brule, al caramello. Alle pere avvolte nel caramello. Alle mele avvolte nel caramello. A una torta di mele e pere irrorata di caramello. E agli S'mores. Che fanno tanto campeggio o tanto film americano, con il gruppetto di adolescenti che si raccontano storie di paura intorno a un fuoco.
Gli S'mores. Un dolce kitsch. Zuccherosissimo. Proprio un'americanata. Consta di tre livelli, uno più godurioso dell'altro: 
1) marshmallow dolcemente abbrustolito che si scioglierà in bocca
2) cioccolato amaro per contrastare il dolce del marshmallow
3) graham cracker. Biscotto friabilissimo, burroso e non troppo dolce.
Nella mia versione** pero' il cioccolato non e' essenziale. I miei marshmallows ai fiori d'arancio si sposano benissimo con le fragole. E vi diro' che neppure il graham cracker e' cosi' vitale. Ma io adoro la mia versione iper burrosa dei graham crackers e cosi' ve ne posto comunque la ricetta.

Every year, as summer ends and in the air I sense the first damp smells of autumn, I feel defeated.  It's fleeting but a part of me is convinced that I have lost a battle. In this battle between summer and autumn I feel strangely culpable. 
No, it's not a deluded sense of omnipotence, but rather the bitter awareness that once again I failed to heed my inner voice that tells me "Just drop everything and open a fresh fruit and smoothie stand in the Caribbean." Then summer would surely ge theta best of autumn! Deep down I think a shack in the Caribbean would be the solution to every problem ... and then I think of chestnuts, Vin Brule, caramel - pears wrapped in caramel… apples wrapped in caramel.  An apple and pear cake drizzled with caramel.  
And then there's the s'mores, that make you think of camping and American movies with groups of teenagers telling scary stories around the campfire.  S'mores. A sweet bit of kitsch, of super-sweet americana. 
It consists of three levels, each one more enjoyable than the previous:
1) gently toasted marshmallow that melts in your mouth
2) bitter chocolate to counteract the sweetness of the marshmallow
3) graham crackers. Cookie crumbly, buttery and not too sweet.
In my version the chocolate is not essential.  These orange-flower flavored marshmallows go wonderfully well with strawberries. In my take on S'mores, even the graham cracker isn't all that important, but since I love my own hyper-buttery graham crackers, I'l post the recipe for those as well.


Marshmallows:
Zucchero/sugar: 350 g
Acqua di fiori d'arancio/Orange blossom water: 3 cucchiai
Colla di pesce/gelatin: 25 g - 3 envelopes
Acqua fredda/cold water: 125
Sciroppo di glucosio/glucose syrup: 160 g
Fragole per accompagnare/strawberries

Graham Crackers:
Farina bianca/white flour: 270 g
Farina integrale/whole wheat flour: 80
Cacao amaro/bitter cocoa: 40 g
Zucchero semolato/sugar: 40 g
Burro/butter 240 g
Sale/salt: mezzo cucchiaino / 1/2 tsp
Miele/honey: 2 cucchiai - 2 tbsp

Per i marshmallows:
Foderate una teglia rettangolare (io ne ho usata una di 25cm X 34cm) con carta da forno e cospargete di zucchero a velo.
Fate ammorbidire i fogli di colla di pesce in 125 ml di acqua fredda (circa 10 minuti).
In una pentola portate ad ebollizione lo sciroppo di glucosio insieme allo zucchero e all'acqua di fiori d'arancio.
Inseritevi un termometro da caramello e lasciate che la temperatura raggiunga 125 gradi.
Una volta raggiunta la temperatura versate sulla mistura colla di pesce-acqua e azionate le fruste.
Sbattete per 10 minuti alla massima velocità.
Se lo desiderate, colorate con qualche goccia di colorante alimentare.
Versate nella teglia e cospargete di zucchero a velo la superficie dell'impasto.
Lasciate riposare per almeno 6 ore a temperatura ambiente.
Trascorse le 6 ore, estraete l'impasto dalla teglia. Posatelo su un ripiano e tagliate i Marshmallows nelle forme desiderate (io ho usato delle forbici da cucina). Rotolate ogni Marshmallow in un po' di zucchero a velo e gustate!

For the marshmallows:
Line up a pan with waxed paper and coat it with powder sugar.
Pour the 3 envelopes of gelatin into the bowl of an electric mixer
Put the cold water into the bowl with the gelatin. In the meantime combine the sugar, the glucose and the orange blossom water in a saucepan. Bring to a boil. Place a candy thermometer in it and watch for the temperature to reach exactly 244°F. 
Pour the boiling sugar mixture into the gelatin mixture and start mixing it at high speed. Beat for at least 15 minutes. Add food coloring, if desired. Spread the mixture evenly in a prepared pan. Sprinkle more powder sugar over the top and let rest for at least 6 hours at room temperature.

Per i Graham Crackers:
Setacciate insieme le farine, il cacao e il sale. In una ciotola lavorate a crema il burro insieme al miele e allo zucchero. Aggiungete gli ingredienti setacciati e lavorate rapidamente fino a raggiungere una massa compatta. Ponete l'impasto in frigo per almeno 2/3 ore. Accendete il forno a 180 gradi. Tolto l'impasto dal frigo stendetelo tra due fogli di carta da forno (e' essenziale se non volete che l'impasto fin troppo delicato si spezzi) mantenendo uno spessore di circa 5 millimetri. Ritagliate i biscotti nelle forme che preferite e infornate per 12 minuti*. Prelevateli dal forno e lasciateli raffreddare su una gratella.

*Non mi fido del mio forno e per accertare la cottura dei miei dolci mi affido spesso all'olfatto. Non appena la casa sarà avvolta nell'aroma dei biscotti e' tempo di controllarne la loro cottura. Aprite il forno. Se la base dei biscotti vi sembra cotta, prelevateli e lasciateli freddare su una gratella.

**Come gustarsi gli S'mores:
infilzate i marshmallows su uno spiedo e manteneteli a qualche centimetro da una fiamma viva (che non sia candela o gas!). Lasciate che si abbrustoliscano leggermente ma state attenti a non bruciarli! I marshmallows sono altamente infiammabili. Il marshmallow e' pronto quando al tatto avvertirete una consistenza interna morbida. All'esterno infatti il marshmallow si manterrà compatto ma all'interno comincerà a sciogliersi. Aggreditelo in due bocconi o spalmatelo su una fragola o su un graham cracker.

For the graham crackers
Sift together the two flours, the salt, and the cocoa powder and set aside.
In the bowl of a stand mixer combine the butter, sugar and honey, and beat until fluffy.
Add the set aside dry ingredients to the butter mixture in three parts, beating until just combined after each addition.
Wrap the dough in plastic wrap and refrigerate for 2 to 3 hours.
Preheat the oven at 350 degrees.
Line a  baking sheet with parchment paper.
Unwrap the dough and place it between two sheet of waxed paper.  roll the dough out to a thickness of about 1/4 inch.
Use the cookie cutter of your choice to cut the dough into shapes.
Arrange the cookies on the prepared baking sheet and bake for about 10 to 12 minutes.
