Frutti di bosco e farfalle di pancarrè …must be Summer Pudding!!!



A me la cucina inglese piace. A molti sembrerà un'eresia ma io adoro i loro goffi tentativi di combinare sapori…Voglio dire, a quale altro popolo sarebbe venuta in mente una torta ripiena di pollo cremoso e pisellini? E vogliamo mettere la praticità di una Shepherd's Pie?  Carne e purè, uno sopra l'altro. C'e' chi il purè lo metterebbe a fianco ma si perderebbe il brivido di affondare la forchetta in pure' croccante, cotto al forno, e finire per scoprire uno strato di bocconcini di carne saporitissimi! E poi c'e' il Summer Pudding. Di una semplicità imbarazzante. Di una bontà sorprendente! . Uno scrigno di pancarrè che racchiude morbidi frutti di bosco. Io lo servo in barattoli di vetro (quelli della marmellata) e lo accompagno con panna leggermente montata e dolce.

I like british cuisine. It might seem like heresy, but I love their slightly clumsy attempts at combining flavors. I mean, from what other culture would we expect a pudding marrying creamy chicken and peas?  And then there's the shepherd's pie - meat and mashed potatoes conveniently piled one on top of the other. Most would simply put the mashed potatoes on the side, but then they would be missing out on the sheer pleasure of digging through a layer of oven crisped mashed potatoes, and discovering a steamy beef stew underneath! And then there is the summer pudding. So embarrassingly simple, and so surprisingly good. A little jewelry box of white sandwich bread hiding a treasure trove of summer berries. I serve it in glass jam jars, accompanied with sweetened whipped cream. I hope you like it!


Frutti di bosco misti (lamponi, more, mirtilli, ribes)/mixed summer berries (raspberries, blackberries, blueberries, fresh currants, etc): 650 gr

Zucchero semolato/sugar
: 100 gr

Pancarrè bianco (il più economico che ci sia. 
Quello dalle fette compatte e non morbide)/white sandwich bread (for this dessert I prefer firmer bread): 19/20 fette/slices

Limoni (succo)/Lemon juice: 2 cucchiai/tablespoons

Barattoli da marmellata vuoti da 240 ml/empty jam jars (240ml is a good size - straight sided is best): 4/5

In una pentola portate i frutti di bosco, lo zucchero e il succo di limone ad ebollizione. Lasciate sobbollire a fuoco dolce per 5/8 minuti. Mescolate delicatamente per mantenere la frutta integra. Dovrete ottenere abbastanza succo per poter bagnare le fette.
Private le fette di pancarrè della crosta. Tagliatele a strisce della larghezza di un centimetro più due dischi per barattolo (per la base e il sopra). Foderatevi i barattoli. Riempite di frutti di bosco e bagnate completamente le strisce con il restante succo.
Lasciate riposare in frigo per almeno 3 ore.

In a saucepan, bring the berries, sugar and lemon juice to a boil. 
Reduce heat and simmer for about 5 to 8 minutes - until the berries release their juices.
Stir gently (try no to mash the berries)
Cut the crust off the bread slices.  Cut the bread slices into strips about 1 to 1.5 inches wide, and slightly less tall than the jam jars.
Cut a circle of bread the size of the bottom of the jars, and insert into the bottom.
Line the walls of the jar with the bread slices.
Spoon the berries and berry juice into the bread-lines jars, and cover each one with another circular piece of bread.
Cover the jars and place them in the fridge for at least 3 hours.
Serve cold.
